Before going further to discover the details of Dolby Atmos games on PS5, be aware that support for audio technology from Dolby laboratories is only available via HDMI. By that we mean televisions, soundbars, Home Cinema amplifiers... It's impossible to enjoy them with headphones.
PS5 Dolby Atmos games, how to enjoy them?
Please note, the PS5's Dolby Atmos support is linked to Dolby MAT technology (PCM signal + Dolby Atmos metadata), so the HDMI connector on the television, soundbar, amp, etc. must support eARC functionality and not only ARC, under penalty of audio desynchronization. Then, to benefit from it, you must correctly configure the PlayStation 5 console: Settings menu > Sound > Audio output > Audio format (Priority) > Dolby Atmos (see photo below). Finally, Dolby Atmos compatibility for games available on PS5 only concerns those bearing the Tempest 3D Audio label.
PS5 games not compatible with Dolby Atmos, the situation is not fixed
Namely, certain games available but lacking the Tempest 3D Audio label could in the future benefit from a Dolby Atmos update, depending on the wishes of their developers.
